Chocolate sponge cake with chocolate ganache

Ingredients For Cake

  1. Egg yolks- 6 large at room temperature (Separate the egg yolks and egg whites)
  2. All purpose flour- 1 and half cups
  3. Cocoa powder- 1 cup
  4. Dark chocolate- 6-8 pieces
  5. Melted butter- 1/3 cup
  6. Vegetable oil- 1/2 cup
  7. Milk-1 cup
  8. Sugar- 1/3 cup
  9. Baking powder- 1.5 teaspoons
  10. Baking soda- 1/2 teaspoon
  11. Salt- 1/3 teaspoon
  12. Instant coffee powder- 1/2 teaspoon
  13. Vanilla essence
  14. Vanilla sugaror plain sugar- 1 teaspoon

Ingredients for Ganache

  1. Dark Chocolate-150 gm
  2. Cream- 200 ml

Ingredients for Choco buttercream filling

  1. Butter- 1/2 cup
  2. Sugar- 1/3 cup sugar
  3. Vanilla essence-1 teaspoon
  4. Chocolate ganache- 1 teaspoon

Method

1.Grease your baking tin with melted butter and place a parchment paper on it. Preheat your oven to 170 degree celsius.

2.In a saucepan add milk and let it boil. Add coffee powder and dark chocolate to it. Keep stirring until chocolate melts completely. Switch off the gas and let it cool.

3.In a mixing bowl whisk together the egg yolks. Add melted butter, vegetable oil and sugar to it. Whisk the mixture until the sugar dissolves completely and make a smooth batter.

4.In a separate large bowl, sieve the flour with cocoa powder, baking powder, baking soda and salt.

6.Now add half of the dry ingredients along with half of the milk and chocolate mixture to the egg mixture and mix them together. Then, add the remaining half of the dry ingredients and milk mixture in 2 batches and mix just until well incorporated. After that, mix the batter again with an electric beater for 2 minutes.

7.In a separate bowl whisk together the egg white with vanilla sugar and vanilla essence until stiff peaks are formed.

8.Now gently fold the egg whites to the cake batter with a spatula. Do not over mix the batter.

9.Now pour the batter into the greased baking tin and put in the preheated oven. Bake it for 55-60 minutes or until a wooden skewer when inserted into the center of the cake comes out clean.

10.Remove the cake from the oven and invert it upside down and let it cool completely. You can enjoy like this or you can frost it with your favorite frosting.

11.With a sharp knife cut the top layer or crust of cake and make it smooth. Now cut the cake horizontally into two halves.

Chocolate Ganache

Heat cream in a saucepan over a medium heat. When it starts to boil switch off the gas and add dark chocolate to it. Let it melt in the cream for 2-3 minutes. Then whisk it until its turns creamy and shiny. The Ganache is ready.

 

Choco-butter-cream filling

In a bowl add soft room temperature butter with vanilla essence and sugar. Add sugar little at a time and beat it with an electric beater. Whisk until a creamy mixture formed. Now add a tablespoon of ganache that we made before to it and again beat it for a minute until well incorporated. If it’s too thick, you can add few drops of milk.

 

Assembling the cake

Put one piece of cake into the serving plate. Add sugar syrup over it, then spread choco buttercream filling and place some filling in a piping bag for decoration. Now moist the second layer of cake with sugar syrup too and gently place it over the cake.

Pour the hot chocolate ganache over the top of the cake and let it drip over the sides.

Decorate it as per your choice.

Refrigerate it for overnight before serving, it will taste better. You can refrigerate and store it for 4-5 days.
