Spritz cookies (Christmas Cookies)

Spritz cookies or “Spritzgebäck” are traditional German cookies which is made in most of the German households during Christmas. These cookies are made with flour, butter, plain sugar, and vanilla sugar. Some use powdered almonds and hazelnut also in it. These cookies are crisp, fragile, dry, and very delicious. It is usually made by extruding the dough with a cookie press, fleishwolf (traditional german meat grinder), or a pastry bag fitted with a nozzle.

Spritzgebäck is a common German cookie which is served often during Christmas. Traditionally, it is made a couple of weeks before Christmas together by the parents, grandparents and children. In addition to keeping up with the German tradition, it is also a fun activity that bring families together.

Every household has their own special “Spritzgebäck” recipe that reflects their family tradition. It was my dear friend Conny who taught me her family recipe. I love the whole process of making them (not to mention eating later). Usually, I bake them together with Conny every Christmas season. This time we decided together to record and put this recipe on my channel for people to see and be able to make them. I am sure, not only Christmas, these cookies will add a special flavor to festivals across regions and cultures.

Ingredients

  • Egg Yolks (Yellow)- 3 large
  • Sugar-  250 gms
  • Butter (room temperature)- 250 gms
  • Plain flour (Maida)- 275 gms
  • Corn starch- 100 gms
  • Powdered almonds- 125 gms
  • Vanilla sugar- 1.5 sachet

Method

In a mixing bowl take butter at room temperature. Add in Sugar, vanilla sugar and egg yolks in it and mix it well with a  handmixer. I am using dough attachment for mixing it.

Once butter and sugar are mixed together then keep it aside.

Next sieve together flour and corn starch and keep it in a separate bowl.

Add half of the flour mix to the butter and mix it again. After that, add the remaining flour and combine it well until it becomes a soft dough.

Now add the almond powder in it and mix it well.

Knead the dough with your hand to make a smooth dough. Cover it with an aluminum foil or a plastic wrap and keep it in the refrigerator overnight.

Next day, take out the dough from the fridge and cut it into small pieces. Set your cookie maker, I am using traditional Fleishwolf for making cookies.

Preheat your oven at 150 degree Celsius and line your baking tray with parchment paper.

Now start making the cookies with the help of cookie maker as per your desired shape. Keep them lined in a baking tray.

If you don’t have a cookie maker or a cookie press, then you can roll the dough and cut it into desired shapes with the help of a cookie cutter.

Now place the cookie tray in the oven and bake it for 10 minutes or until the edges are golden brown.

Once its done, take it out from the oven and let it cool.

You can enjoy this delicious cookies with a cup of coffee as it is. Or if you like you can dip half the cookies in melted chocolate, let it dry and relish it. You can store them in airtight container for a month.
