Aloo gobhi sabji (potato-cauliflower)

Aloo-gobhi sabji is very common vegetable recipe that is made in all Indian households. Every household has it’s own recipe. Here, I am sharing my version of aloo-gobhi which goes very well with roti and paratha. This recipe has been strongly requested by my friends who tasted it at my house. Finally, it is here in my blog.

Ingredients

  • Cauliflower – 1 small (450 gms approx.)  cut into small florets
  • Potato – 4-5 (350 gms approx)
  • Tomato -1 Big roughly chopped
  • Onion – 1 sliced
  • Frozen peas -1/2 cup
  • Oil- 2 tablespoons
  • Green chillies – 4
  • Ginger -1 inch cut into small pieces
  • Cinnamon stick – 1 small piece
  • Green cardamom – 2
  • Cumin seeds- 1 teaspoon
  • Heeng (asaphetida) – 2 pinch around
  • Paanch phoran -1/2 teaspoon
  • Bay leaf – 1
  • Dried red chilli -1
  • Ginger -garlic paste – 1 tablespoon
  • Turmeric powder -1/2 teaspoon
  • Red chilli powder -1/2 teaspoon
  • Coriander powder -1 teaspoon
  • Kitchen king powder – 1 teaspoon
  • Garam masala -1/2 teaspoon
  • Aamchur powder – 1/3 teaspoon
  • Kasoori Methi- 1 teaspoon
  • Green coriander – finely chopped
  • Sugar -1/4 teaspoon
  • Salt to taste
  • Water -1 cup

Grind tomato, cinnamon, cardamom, ginger and 1 green chilli into fine paste. And keep it aside.

Heat a kadhai and add oil. Once it is hot then carefully add cauliflower florets and fry it until it turns light brown. Then add in potato pieces and keep frying them till they are golden brown. Take it out in a plate.

In the same oil, add in bay leaf, cumin seeds, paanch phoran, hing and green chillies. Saute it for a few seconds and then add sliced onions. Fry it for 5 minutes on high heat. Once it starts browning, add in ginger -garlic paste and a little salt. Mix it well and keep frying for another 3-4 minutes.

Add the dry spices (turmeric, chilli, coriander, kitchen king and aamchur powder) with little water. Mix in well and keep stirring so that masala doesn’t get burned. Add the ground tomato paste in it and keep frying for 5 minutes. Cover and let it cook. When oil starts to separate then add the fried cauliflower and potatoes saute for a few minutes. Add water, salt, and sugar and cover it with a lid. Let it simmer for 10 minutes. Stir it in between so that the masala doesn’t stick to the bottom.

Add frozen peas and mix it well with the vegetables. Again add little water and cover it. Let it cook on a medium to low heat.

Check the potatoes and cauliflower if it is soft. Then add in kasoori methi, garam masala and chopped coriander. Mix it well, cover it with a lid and switch off the stove. Let it remain covered for 10 minutes. Aloo gobhi sabji is ready to serve with roti, paratha or rice.

It goes very well with Roti (Indian flat bread).
